How to make Nut Mountains

  • Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the roughly chopped macadamia nuts and crushed digestive cookies. Add the melted white chocolate to the bowl and stir until all the ingredients are coated and well combined.
  • Use a spoon, scoop out small portions of the mixture and then shape them into mountain-like clusters. Place them on the prepared baking sheet.
  • Once all the clusters are formed. Place the baking sheet in the refrigerator for about 20 minutes to allow the mixture to set.
  • Melt the dark chocolate using a double boiler or microwave, stirring occasionally until smooth and fully melted.
  • Remove the baking sheet from the refrigerator.
  • Then one by one, dip each cluster into the melted dark chocolate. Ensure they are fully coated. Use a fork or spoon to gently lift and tap off any excess chocolate.
  • Place the dipped clusters back onto the parchment-lined baking sheet.
  • Melt some white chocolate. Use a fork and throw some white chocolate on top of each cluster for decoration.
  • Finally return the baking sheet to the refrigerator. Allow the chocolate to set completely, which usually takes about 1 hour.
  • Once set, carefully remove them from the baking sheet. Transfer them to a serving platter or store them in an airtight container until ready to serve.

Ingredients
  

  • 200 g White chocolate
  • 100 g Digestive biscuits
  • 120 g Raw Macadamia nuts or Brazil nut
  • 250 g Dark chocolate
  • 1 tsp Oil flavorless

Instructions
 

  • Melt the white chocolate in a Bain marie.
  • Coarsely chop the nuts and the digestive and mix them with the melted white chocolate.

  • Divide it into portions using teaspoon on a non stick baking paper .

  • Put them in the refrigerator until they harden.
  • In the meanwhile, melt the dark chocolate in a bain-marie. Mix the oil with the chocolate when it’s melted ( it gives a nice shine to the chocolate).
  • Take to “mountains” out of the refrigerator and dip them into the dark chocolate.
  • Melt some white chocolate. Use a fork and throw some white chocolate on top of the Nut mountains for decoration.
