I found an old recipe of a moist apple cake and decided to make some changes to it. I just added some more ingredients and spices, and it was totally worth it. This apple cake is soft, moist, full of flavor and not to sweet .
The spices I use in this apple cake are cardamom, cinnamon and nutmeg. I love that spice mix with the apples. This cake also contains nuts and raisins.
You bake it in a large 28 x 38 cm baking pan, so with this recipe you have many pieces of apple cake to enjoy.
Tip and trick
- You can use any type of apple you prefer, but preferably not sour apples such as Granny Smith.
- If you don’t have sour milk at home, it’s very easy to make it yourself. Mix 114 ml (1/2 cup) milk and add 1/2 tbsp (7 ml) vinegar or lemon juice. Stir and let stand for 5 minutes before using. This will provide the correct amount of acid for the recipe.
- In this recipe I prefer to use self-rising flour. However, you can make your own self-rising flour. For every 1 cup of self-raising flour you substitute, mix 1 cup of all-purpose flour, 1 tsp. baking powder, ½ tsp. salt and ¼ tsp. baking soda (bicarbonate).
How to make it
- Preheat the oven to 185°C
- Peel and cut the apples in small pieces and put them in a bowl. Add the spices (cinnamon, nutmeg, cardamom)and mix then add the nuts and raisins and mix it together.
- In another bowl beat butter and sugar until fluffy.
- Add one egg at a time into the mixture, stirring well.
- Add sour milk and then flour. Finally, add the vanilla extract.
- Mix the spiced apple,nut and raisins mixture with the batter.
- Pour the mixture into a large 28 x 38 cm ( 11 x 14,5 in ) cake pan.
- Bake for 30 minutes at 185° C (365° F).
- Let the cake cool and finally dust with some powdered sugar.
