- 250 g Butter (8.8 oz) at room temperature
- 210 g Sugar ( 1 cup) white sugar
- 110 g Brown sugar (½ cup)
- 5 Eggs
- 114 ml Sour milk (½ cup)
- 500 g Self-rising flour (3 cups + 2 tbsp)
- 2 tsp Vanilla sugar powder or Vanilla extract
- 3 Apples
- 3 tbsp Cinnamon
- 2 tsp Cardamom ground
- 1/2 tsp Nutmeg ground
- 100 g Raisin
- 50 g Almonds sliced
- 75 g Pecan nut or Walnuts
Preheat the oven to 185°C (365° F)
Peel and cut the apples in small pieces and put them in a bowl. Add the spices (cinnamon, nutmeg, cardamom), nuts and raisins and mix it together.
In another bowl beat butter and sugar until fluffy.
Add one egg at a time into the mixture, stirring well.
Add sour milk and then flour. Finally, add the vanilla extract.
Mix the spiced apple,nut and raisins mixture with the batter.
Pour the mixture into a large 28 x 38 cm ( 11 x 14,5 in ) cake pan lined with non-stick baking paper.
Bake for 30 minutes.
Let the cake cool and finally dust with some powdered sugar.
