Customizable Sandwich Cake

This recipe features a combination of tuna and eggs, garnished with shrimp and salmon. The beauty of it is that you can create various fillings to suit your taste. For instance, you can try chicken, bacon, and eggs, or even smoked ham, salami, and pate. Simply mix the ingredients you like and spread a layer between the bread slices. To finish, spread the “frosting” on top and around the sides of the cake, just like frosting a regular cake. The key ingredients for both the fillings and “frosting” are mayonnaise and Greek yogurt (or crème fraiche). Enjoy the freedom of customizing your own sandwich cake.

Make sure to finely chop the ingredients for the filling to achieve a smooth and creamy texture. For example, if you’re using ham, salami, or chicken, use an electric mixer* to chop them effectively. Bread

I prefer using plain white bread without crust for this recipe. However, if you’re unable to find bread without crust, regular sandwich bread will work too. Simply remove the crust by cutting off the edges. To determine the size of the cake, place the bread slices on a tray and adjust accordingly. If you prefer a round cake, use a plate as a guide and cut the bread before assembling the cake.

I recommend that you make the cake the day before it’s to be served, so the bread absorbs the liquid from the fillings. It’s a great make ahead recipe. Decorate the cake on the day you serve it so that it looks fresh. Be sure to make a big cake, because you probably want some left the next day.

  • 12 slices White sandwich bread

Tuna filling

  • 130 g Mayonnaise (4.6 oz)
  • 130 g Greek yoghurt or crème fraiche (4.6 oz)
  • 1 Tuna canned in oil or water
  • 3 tbsp Dill finely chopped
  • 1 small Onion finely chopped
  • 2 tbsp Lemon juice freshly squeezed
  • Salt
  • Pepper
  • Cayenne pepper powder

Egg filling

  • 130 g Mayonnaise (4.6 oz)
  • 130 g Greek yoghurt or crème fraiche (4.6 oz)
  • 5 Eggs hard boiled
  • Salt
  • Pepper

Frosting

  • 150 g Mayonnaise (5.3 oz)
  • 150 g Greek yoghurt or crème fraiche (5.3 oz)

Sandwich Cake Decorating

  • 200 g Shrimps (7 oz) precooked
  • 200 g Salmon (7 oz) smoked slices
  • 2 tbsp Caviar
  • Lettuces mixed
  • Dill
  • Lemon

Instructions
 

Egg filling

  • Boil eggs and finely chop them.
  • Mix mayonnaise and Greek yogurt (or crème fraiche) in a bowl. Add finely chopped eggs, salt, and pepper. Blend everything together thoroughly.

  • Give it a try and adjust the seasoning with more salt or pepper if desired.

Tuna filling

  • Thoroughly combine mayonnaise and Greek yogurt (or crème fraiche) in a bowl.
  • Add tuna, finely diced onion and dill, lemon juice, salt, pepper, and a pinch of cayenne pepper.

  • Give it a taste and adjust the seasoning by adding more salt, pepper, or cayenne pepper if desired.

Assemble the cake.

  • Place four slices of white sandwich bread in a square shape, or cut the bread if you prefer a round cake.

  • Evenly spread the egg filling on top of this new layer, ensuring it covers the bread slices.
  • Add the final layer of 4 bread slices on top, completing the sandwich cake.

  • In a bowl, thoroughly mix mayonnaise and Greek yogurt (or crème fraîche). Pour the mixture over the cake.
  • And spread the mixture evenly all over the cake, making sure to cover the top and sides completely.
