On a hot summer day, there is nothing I want more than a cold Summer Fresh Watermelon salad. My grandfather used to eat watermelon with feta cheese and a slice of bread as a snack during the hot summer days in Greece. So for me, the combination of watermelon and feta cheese is a childhood memory.

Summer fresh watermelon salad with a slice of bread is perfect as a lunch. Greek style, fresh bread from the bakery goes with everything.

This summer salad is perfect to enjoy as it is or as a side dish to a juicy chicken fillet.

What makes this salad so good is the honey/lime vinaigrette. It just takes it to another level. The little secret with this vinaigrette is to let the chopped onion rest in the vinaigrette for 10 minutes. It takes away the strong taste of the onions and make it sweeter.

This Summer Fresh Watermelon salad is best prepared and enjoyed the same day.

You can use the watermelon as a salad bowl. Just scoop out all the meat and fill it with your salad. It looks fantastic and perfect for buffet.

Try to remove as many seeds you can from the watermelon. You want to enjoy your salad, not spitting out seeds all the time. You can actually roast the seeds and use them as snack, just like sunflower seeds.

A fresh summer salad perfect to enjoy as it is or as a side dish.

  • 3 tbsp Onion red small
  • 3 tbsp Olive oil extra virgin
  • 1 tbsp Balsamic vinegar
  • 1 tsp Honey
  • 1 Lime Juice from one lime


  • 800 g Watermelon (1.7lb)
  • 100 g Feta (3.5 oz)
  • 20 Spearmint leaves, chopped



  • Finely chop onion.
  • Add all the ingredients for the vinaigrette in a small bowl and whisk it all together. Add onion and let it rest for 10 minutes.


  • Scoop out the meat from the watermelon and cut into pieces.
  • Cut watermelon into small cubes. Try to remove as many seeds you can from the watermelon.
  • Chop Peppermint leaves.
  • Add watermelon, chopped peppermint and feta in a bowl. Add the vinaigrette and gently toss to combine.
  • Transfer salad into your watermelon bowl.
