You want it to simmer up to 60°C. If you don’t have a food thermometer just take the pot from the heat before it starts to boil. The longer you let the ginger rest in the water, the stronger it becomes. I usually let it stand for 1 hours, before I strain it ( I like it when it’s spicy).
