Ingredients
  

  • 100 g Unsalted butter (3.5 oz) , at room temperature
  • 90 g Granulated sugar (3.1 oz) (1/2 cup) granulated sugar
  • 145 g All-purpose flour (1 cup)
  • 3 tbsp Honey or 2 tbsp Ljus Sirap (Golden syrup)
  • 2 tsp Vanilla extract or vanilla powder
  • tbsp Cocoa powder (1/4 cup) (5.1 oz) (30 g)
  • ½ tsp Baking powder

Instructions
 

  • Preheat your oven to 180°C (350°F).
  • Mix the butter and sugar together.
  • Add the honey and vanilla extract, blending well.
  • Sift together the flour, cocoa powder, and baking powder. Add to the butter mixture, mixing until a smooth dough forms.

  • Divide the dough into 3 parts.
  • Shape each part into a roll and place them on a baking tray lined with non-stick baking paper. The cookies will spread during baking, so leave enough space between the rolls.
  • Gently flatten the rolls with your finger.

  • Bake the cookies for 12-14 minutes, until slightly firm to the touch.
  • Once out of the oven, immediately and carefully cut them diagonally while they are still warm. Allow the cookies to cool, then enjoy your homemade chocolate toffee cookies.

  • Before baking, brush the cookie rolls with a beaten egg and sprinkle with pearl sugar. This adds a nice crunch and a touch of sweetness. (Only brush with egg if using pearl sugar)
