- 80 g Flour 80 g flour (⅓ cup + 1 tbsp) (1¼dl) all-purpose
- ½ tsp Baking powder
- 100 g Butter (3.5 oz)
- 135 g Sugar (⅔ cup) (1½dl) Granulated Sugar
- 1 Egg
- 2 tbsp Cocoa powder
- 1 tsp Vanilla sugar or vanilla extract
- 75 g Roughly chopped nuts (⅔ cup) (1½dl)
Start by mixing the flour and baking powder in a small bowl. Set it aside. This helps the baking powder spread evenly later on.
In another bowl, beat the softened butter and sugar together until light and fluffy. This will give your squares a soft, tender texture.
Now, add the egg and mix well.
Sift in the cocoa powder, vanilla sugar (or essence), and a pinch of salt. Sifting helps avoid lumps and keeps the batter smooth.
Gently fold the flour mixture into the wet ingredients. Stir until everything is just combined, but don’t overmix.
Line a 25×35 cm (10×14 in ) baking pan with parchment paper. Spread the batter evenly into the pan.Roughly chop your favorite nuts and sprinkle them generously over the batter.
Place the pan in the middle of the oven and bake at 175°C for about 15 minutes. Check around the 12-minute mark to make sure it doesn’t over-bake. The cake should be firm but still soft when done.
While the cake is still warm, cut it into 5×5 cm ( 2 x2 in) squares. It’s easier to cut while it’s warm, and you’ll get clean, neat pieces.
