Dream cookies, or "Drömmar" in Swedish, are delicate, crispy treats perfect for any occasion. These traditional Swedish cookies are known for their light, airy texture and subtle sweetness.

Ingredients
  

  • 50 g Butter (1.75 oz) room temperature
  • 90 g Sugar (2/3 cup ) (1½dl)
  • 2 tsp Vanilla sugar or vanilla extract
  • 3 tbs Vegetable oil
  • 1/2 tsp Baker’s Ammonia
  • 120 g All-purpose flour (3/4 cup) (2 dl)

Instructions
 

  • Preheat oven to 150°C (300°F).
  • Mix butter, sugar, and vanilla sugar until smooth.

  • Gradually add oil while mixing.

  • Combine Baker’s Ammonia with a bit of the flour, then add to the dough.

  • Work in the remaining flour.

  • Roll small dough balls and place them on a lined baking sheet.

  • Bake in the middle of the oven for 15-17 minutes.

  • Let the cookies cool on the baking sheet.

Notes

These dream cookies / drömmar freeze exceptionally well, so I often make a double batch and freeze some for later. They also stay fresh for up to a week in an airtight container at room temperature.
