Preheat the oven 175°C
Sift all the dry ingredients into a bowl. (flour, cacao powder, vanilla powder, salt, and baking powder)
Roughly chop the chocolate.
In an other bowl whisk the butter and the sugar (Caster and dark) until fluffy.
Add one egg at a time and whisk in-between. ( If you use vanilla extract add it now)
Add the flour mixture into the butter mixture. Continue mixing until just combined.
Add chocolate chips until fully incorporated into the cookie dough.
Scoop the cookie dough, I use a 2 tablespoons scoop and place each ball approximately 5 cm apart on the baking sheet. The cookies will spread as they bake.
Flatten each cookie a little with your finger.
Bake for 10 minutes.
Cool the cookies completely on the cookie sheet and then store them in an airtight container.
