No store dressed dressing is like homemade. This recipe makes this dressing creamy, balanced and full of flavor.

Equipment

  • 1 stick mixer or chopper with mayonnaise attachment

Ingredients
  

  • 2 Anchovy fillets salt packed
  • 1 tsp Dijon mustard
  • 1 Egg yolk
  • 1 Garlic clove pressed
  • 1 tsp  Worcestershire  sauce
  • 2 tsp Vinegar white
  • 1 tbsp Lemon juice freshly squeezed
  • 100 ml Olive oil (½ cup) extra virgin
  • 45 g Parmesan cheese (¼ cup) grated
  • 1 tbsp Milk
  • 2 pinch Salt
  • 1 pinch Pepper

Instructions
 

  • Press the garlic and all the ingredients except the Olive oil in the food processor.
  • Process until smooth and well blended.
  • Then VERY SLOW, while the processor is still working add the oil.
  • Enjoy your Caesar dressing!

Notes

Because of the egg yolks, this dressing must be refrigerated immediately if not used right away. You can store this dressing up to 3 days. The dressing can get thicker in the refrigerator, so you can dilute with a little cold milk if it becomes too thick.
