Broccoli and Apple Salad

- 300 g Broccoli florets (10 ½ oz)
- 1 Red bell pepper , cut into pieces
- 1 Apple red
- 30 g Pine nuts (1 oz)
- 60 g Almonds blanched (2 oz) roughly chopped
- 4 tbsp Olive oil Extra virgin
- 2 tbsp White vinegar
- 2 tbsp Balsamic cream vinegar
- 1 tbsp Honey
- 2 tsp Mustard
- 1 tsp Salt
- ½ tsp Pepper black
In a dry pan, toast the pine nuts until golden. Chop the almonds roughly.
Finely chop the broccoli, bell pepper, and apple into small pieces. You want tiny, crisp bits in every bite.
In a small bowl, whisk together the olive oil, fruit vinegar, white balsamic, honey, mustard, salts, and pepper.
In a big bowl, combine the chopped veggies, apple and nuts. Pour over the dressing. Mix well.
